FIELD: food industry.
SUBSTANCE: group of inventions relates to coffee and dairy industry. Described is a defatted powder whitener having less than 1 wt.% fat, containing from 5 to 15 wt.% hydrothermally treated long-chain fibrous inulin, having chain length from 14 to 60, from 5 to 20 wt.%. micellar casein and a residue containing one or more sweeteners and/or fillers, in which the residue contains from 15 to 40 wt.% per weight of defatted powdered whitener, short-chain fibrous inulin, having a chain length of 10 to 12, and from 20 to 50 wt.% in terms of weight of defatted powdered whitener of corn fibre syrup. Described also is a coffee drink containing such a whitener and use of the whitener to form a whitened drink when dissolved in water. Also disclosed is a method of producing a defatted powder whitener.
EFFECT: group of inventions enables to create compositions of a fat-free whitener with very low fat content, namely less than 1 wt.%, while ensuring proper whitening quality.
