FIELD: food processing industry, in particular confectionary industry.
SUBSTANCE: device for production of confectionery goods having shaped shell, viscous filling and mass of 3 g or less (preferably 1-2.75 g) includes pressing mechanism containing backed for ejecting of viscous confectionery filling, and mechanism for cutting of backed driving containing valve assembly and jet with outlet of decreased diameter. Method for production of claimed confectionery goods includes jigging of viscous confectionery filling into shell made of fat-containing raw materials. As fat-containing confectionery raw materials black, milky or white chocolate is used. Fat-containing confectionery raw materials have moisture content less than 10 % and represent sugar-based product with or without milk and fat components and plant-original dry matters or cocoa in various ratio. Fat-containing confectionery raw materials include cocoa substitutes containing equivalents of cocoa oil, stearins, coconut oil, palm oil, milk butter of mixture thereof. As viscous confectionery filling caramel mass, ground coconut, yogurt, fondant mass, jelly, etc. or mixture thereof are used.
EFFECT: confectionery goods with viscous filling of improved quality.
