FIELD: alcohol production.
SUBSTANCE: claimed method includes grinding of earth apple tubers, blending of ground mass with water in ratio of 2:1. Obtained mixture is heat treated at 93-95°C for 35-40 min, cooled to 55±2°C followed by hydrolysis for 35-40 min by using enzyme preparation Fructozyme L in amount of 1-2 inulinase activity units per 1 g of relative inuline. Obtained mash is fermented by introducing of yeast prepared by phased method. Media for phased yeast reseeding are prepared from starch-containing malt mash. Method of present invention makes it possible to accelerate process of mash hydrolysis from 2-3 h to 40 min and reduce fermentation time by 12 hours.
EFFECT: accelerated method for ethanol production; increased ethanol yield.
