FIELD: wine-making industry, microbiology. SUBSTANCE: invention relates to strains of yeast used for preparing fruit-berry beverages. The novel strain Saccharomyces oviformis Peach is deposited in VKPM at collection number γ- 2424. The strain Saccharomyces oviformis Peach γ- 2424 is used for fermentation of peach must. New strain ferments peach must and forms ethanol by 0.55 vol. % more as compared with the control strain Saccharomyces vini Plum 21. The strain Saccharomyces oviformis Peach γ- 2424 shows the greater reducing ability and terminates the fermentation by 45-48 h early as compared with control. Clearance of wine material occurs early also. EFFECT: new yeast strain indicated above, accelerated process, improved quality of peach wine material, increased yield of alcohol. 1 tbl, 1 ex
