SUBSTANCE: invention refers to alcohol industry. Method provides for mixing of minced girasols bulbs with water in ratio 2:1, heat treatment of obtained mixture, hydrolysis during 35-40 minutes using enzyme preparation Fructozyme L in quantity of 1-2 units of inuline activity for 1 g of conventional inuline, attenuation of obtained wort at the temperature of 30°C by adding Kluyveromyces marxianus γ-303 production yeasts which are produced stepwise in the amount 10-12% of wort weight.
EFFECT: reduced duration of fermentation and increased outcome of ethanol.
