FIELD: meat processing industry; public catering.
SUBSTANCE: invention is intended for use in the meat processing industry and public catering in the production of semi-finished products. A method for preparing combined meat-vegetable mince includes mixing in a mixer of Estonian quail meat of mechanical deboning, where a pre-hydrated 1:3 protein-carbohydrate composition consisting of triticale flour of the “Ukro” variety and TIPRO-601 protein is introduced. Components of mince are used in the following ratio (wt.%): Estonian quail meat - 85, triticale grain flour of the “Ukro” variety - 13, Tipro-601 protein - 2. The resulting mince is suitable for use both chilled and frozen.
EFFECT: proposed method for preparing combined meat-vegetable mince provides a product of high quality and nutritional value, allowing one to get full-fledged food.
