FIELD: oil and fat industry.
SUBSTANCE: invention relates to methods for protection of lipids, oils and fats against oxidizing. The composition comprises phenolic antioxidants wherein the following compounds are used as an antioxidant: 1-(N-4'-hydroxyphenylpropyl-3'5'-ditri-tert.-butyl)-5-ethylsalicylic acid amide or 1-(N-4'-hydroxyphenylpropyl-3,3',5'-tri-tert.-butyl)-5-ethylsalicylic acid amide, or 1-(N-4'-hydroxyphenylpropyl-3,3',5'-tri-tert.-butyl)-5-ethylsalicylic acid sulfide taken in concentrations from 0.10 to 5.00 mM. The claimed composition is added in the amount 0.01-0.68% of lipids mass. Invention provides decreasing the rate of lipids oxidation rate by 2-10 times and to reduce the level of hydroperoxides formed in process of oxidation of lipids by 70-73%.
