FIELD: food processing industry, in particular protection of lipids, oils, fats from oxidation and oxidative destruction.
SUBSTANCE: composition for lipid stabilization includes α-tocopherole and antioxidant sinergyst, wherein as antioxidant sinergyst β'-(3,5-ditert-butyl-4-hydroxyphenyl)propanoic acid N,N,N-trimethylaminoethyl ester iodide is used. All component are used in specific ratio. Composition is added in amount of 0.04-0.28 % based on lipid mass. Composition of present invention makes it possible to reduce rate of lipid oxidation by 2-7 times and additionally to reduce level of hydroperoxides by 55.0 %.
EFFECT: composition for effective lipid protection form oxidation.
