FIELD: fat and butter industry.
SUBSTANCE: invention proposes a composition for stabilization of lipids that comprises a phenolic antioxidant. As a phenolic oxidant invention proposes using individual β'-(3,5-di-tert.-butyl-4-hydroxyphenyl)propanoic acid N,N,N-trimethylaminoethyl ester iodide or β'-(3,5-di-tert.-butyl-4-hydroxyphenyl)propanoic acid N,N-dimethyl-N-hexadecylaminoethyl ester bromide taken in the concentration from 0.10 to 5.00 mM. Phenolic antioxidant is added in the amount 0.01-0.68% of lipids mass. Invention provides enhancing the inhibitory effect at minimal concentrations of antioxidant.
