FIELD: oil and fat industry.
SUBSTANCE: invention relates to methods for protection of lipids, oils and fats against oxidation. The composition comprises phenolic antioxidant and lecithin as a substance-synergist of antioxidant. Method involves using 1-(N-4'-hydroxyphenylpropyl-3,3',5'-tri-tert.-butyl)-5-ethylsalicylic acid amide. The claimed composition is added in the amount 0.15-1.27% of the lipid mass and wherein all components are taken in the definite ratio. Invention provides reducing the rate of lipids oxidation by 2-6 times, and to decrease the level of hydroperoxides formed in the process of lipids oxidation by 71.9%.
EFFECT: improved and valuable properties of composition.
