METHOD FOR COAT FORMING ON CHEWING GUM OR OTHER CANDY USING HYDROGENISED ISOMALTULOSE (VARIANTS) Russian patent published in 2006 - IPC A23G3/50 A23G4/18

Abstract RU 2289262 C2

FIELD: confectionary industry.

SUBSTANCE: in the first embodiment claimed method includes core production. Then core is coated with syrup, water is evaporated from coating syrup and said steps are repeated to produce core with coating layer. Abovementioned syrup includes slurry containing aqueous solution of hydrogenised isomaltulose enriched with excess of α-D-glucopyranosido-1,6-sorbitol (GPS) in contrast to α-D-glucopyranosido-1,1-mannitol (GPM) and hydrogenised isomaltulose containing equal amounts of GPM and GPS. In the second embodiment method includes core production. Then core is coated with the first coating syrup and powdered material is applied on the first syrup, and said steps are repeated to produce core with coating layer. Abovementioned first syrup represents slurry obtained from solution of hydrogenised isomaltulose enriched with excess of α-D-glucopyranosido-1,6-sorbitol (GPS) in contrast to α-D-glucopyranosido-1,1-mannitol (GPM), and powder forming solid slurry in said syrup, wherein this powder comprises hydrogenised isomaltulose, containing equal amounts of GPM and GPS. In the third embodiment method includes core production. Then core is coated with the first coating syrup and powdered material is applied on the first syrup, and said steps are repeated to produce core with coating layer. Said first syrup includes 0?5-10 mass % of binder and slurry of aqueous solution of hydrogenised isomaltulose, containing both α-D-glucopyranosido-1,6-sorbitol (GPS) and α-D-glucopyranosido-1,1-mannitol (GPM) in GPS/GPM ratio of 99:1-60:04 and powder of hydrogenised isomaltulose, suspended in abovementioned solution, wherein powder contains equal amounts of GPM and GPS. The first coating layer is coated with the first coating syrup and dried to produce the second coating layer on core.

EFFECT: coating of improved quality; accelerated method for coating application.
