METHOD FOR PRODUCING VODKA "KOLESNIK LUKS" Russian patent published in 2006 - IPC C12G3/08 

FIELD: liqueur and vodka industry.

SUBSTANCE: method involves preparing an aqueous-alcoholic solution (mixture) from rectified ethyl alcohol "Luks" and purified drinking water with the content of natural silver ions up to 0.03 mg/dm³ to provide preparing ready vodka with the strength 40%. Prepared mixture is stirred thoroughly and after its correction for the strength value is pumped over into supply tank followed by feeding in carbon-cleansing battery. The filtration rate of mixture through carbon layer with height 4 m is up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated one. Vodka filtered off on carbon-cleansing battery is fed into finishing tank. Glucose is dissolved in purified water, filtered and added into finishing tank at intensive stirring. Sodium hydrocarbonate is divided for two parts. Succinic acid is dissolved in softened water in the volume 1.5-2.0 l and sodium hydrocarbonate is added at constant stirring gradually. Each the next portion is added after the complete reaction of previous portion with succinic acid. After the complete dissolving added components the prepared solution is filtered and added into finishing tank, vodka is stirred thoroughly and the strength value is controlled. After control filtration vodka is bottled. Components used in preparing vodka are used in the following ratio, l per 1000 dal of ready product: glucose, 5.8-6.2; succinic acid, 0.08-0.12; sodium hydrocarbonate, 0.18-0.22, and rectified ethyl alcohol "Luks" and purified drinking water with the content of natural silver ions up to 0.03 mg/dm³, the balance, to provide the strength value 40%. Invention provides accelerating the process by 40-45 min, simplifying the process based on elimination for preparing two solutions, their following mixing and enhancing stability of organoleptic indices based on using water containing silver ions up to 3 years.
