METHOD OF PRODUCTION OF VODKA "TSAREV KURGAN" Russian patent published in 2002 - IPC

FIELD: liqueur and vodka industry. SUBSTANCE: an aqueous-spirituous solution is prepared in the preparing tank by mixing rectified ethyl alcohol "Ekstra" and purified drinking water taken in amount providing 40% strength of blend. An aqueous-spirituous solution is stirred thoroughly and purified in battery with activated carbon at the rate of filtration up to 40 and 30 dal/h for fresh and regenerated carbon, respectively. Then vodka is fed into finishing tank. Sodium hydrocarbonate and tartaric acid are dissolved preliminary in purified water, solutions are mixed, filtered and added into the preparing tank in 5-10 min after onset of an aqueous-spirituous solution preparing. The content of finishing tank is stirred thoroughly. Carbohydrate module "Alkosoft" is dissolved preliminary in warm softened water in the ratio 1:1 and added by parts in the process of thorough vodka stirring. Then vodka strength is controlled, corrected if necessary and stirred. Vodka is bottled with obligatory control filtration. The following components are used, per 1000 dal of vodka: carbohydrate module "Alkosoft", 4.0-6.0 kg; tartaric acid, 0.09-0.3 kg; sodium hydrocarbonate, 0.08-0.4 kg; rectified ethyl alcohol "Ekstra" and purified drinking water are taken in amount to obtain 40% strength. Invention ensures to obtain vodka with higher organoleptic indices and high stability by means of combination of technological procedures, parameters and components showing properties exceeding that of separated components. EFFECT: improved quality and properties of vodka, expanded assortment of vodkas.
