FIELD: food processing industry, in particular production of dietary flour confectioneries.
SUBSTANCE: claimed composition contains flour, sand sugar, fat phase, mélange, salt and nuts, wherein as flour mixture comprising wheat, buckwheat, and lentil flour, as well as grit from germinated millet corn is introduced. Said grit from germinated millet corn is obtained by two-step process, wherein in the first step corn is treated with water up to 0.1-1 mm sprout appearance, and in the second one it is ground at 40-60°C and flow rate 0.3-0.5 m/s to produce particle size of 0.1-2 mm. More particularly claimed composition contains (mass %): wheat flour 26.43-27.00; buckwheat flour 9.27-11.47; lentil flour 2.20-2.30; grit 5.7-6.10; salt 1.04-1.12; sand sugar 17.22-17.62; fat phase 25.0-28.38; mélange 5.24-6.18; and balance: nuts.
EFFECT: composition for production of flour confectionery of improver organoleptic, physicochemical characteristics, food value, and prolonged storage time.
