FIELD: oil and fat industry.
SUBSTANCE: invention relates to methods for protection of lipids, oils and fats against oxidation. The composition comprises phenolic antioxidant and lecithin as a substance-synergist of antioxidant. Method involves using β'-(3,5-di-tert.-butyl-4-hydroxyphenyl)propanoic acid N,N,N-trimethylaminoethyl ester iodide as a phenolic antioxidant. The claimed composition is added in the amount 0.15-1.27% of the lipid mass and wherein all components are taken in the definite ratio. Invention provides reducing the rate of the oxidation process of lipids by 2-5 times and to decrease the level of hydroperoxides formed in the process of lipids oxidation by 54.7%.
