FIELD: oil and fat industry.
SUBSTANCE: invention relates to methods for protection of lipids, oils and fats against oxidation. The composition comprises α-tocopherol and a synergist of antioxidant wherein β'-(3,5-ditert.-butyl-4-hydroxyphenyl)propanoic acid N,N-dimethylhexadecylaminoethyl ester bromide is used as a synergist of antioxidant. The claimed composition is added in the amount 0.04-0.28% of lipids mass wherein all components are taken in the definite ratio. Invention provides reducing the rate of lipids oxidation by 2-5 times and decreasing level of hydroperoxides formed in process of lipids oxidation by 51.0% also.
