FIELD: oil and fat industry.

SUBSTANCE: invention relates to methods for protection of lipids, oils and fats against their oxidation. The composition comprises phenolic antioxidant and synergist of antioxidant. As an antioxidant the composition comprises bis-[3-(3',5'-ditert.-butyl-4-hydroxyphenyl)propyl]-disulfide and a synergist of an antioxidant is represented by 3-hydroxy-6-methyl-2-ethylpyridine succinate. The claimed composition is added in the concentration 0.01-0.75% of lipids mass wherein all components are taken in the definite ratio. Invention provides decreasing the process of oxidation of lipids by 5-10 times and reducing the level of hydroperoxides formed in the process of oxidation of lipids by 73.1% also.
