FIELD: food industry.
SUBSTANCE: the present innovation deals with manufacturing sand cake semi-finished material and products out of this material. Dough composition for manufacturing sand cake semi-finished material includes high-grade wheat flour, granulated sugar, butter, melange, sodium hydrocarbonate, ammonium carbonate, essence, dietary common salt and, additionally, it contains either corn flour at the quantity of 75% against total weight of flour or oats flour at the quantity of 50% against total weight of flour or rice flour at the quantity of 25% against total weight of flour. The present innovation enables to obtain sand cake semi-finished material at increased basic values: friability and soaking capacity and improved organoleptic properties.
EFFECT: higher efficiency.
