FIELD: fish processing industry.
SUBSTANCE: whole roe is removed, sorted, treated and stored. Fresh roe is treated for 10-20 min with 1-2 % aqueous solution of "Mo-Ro-pH" food supplement at temperature from 0 to -3°C. During the first 7 days roe is stored in fresh ice wherein thawed water is replaced with new ice. In 8-10 storage days whole roe is iced with ice prepared from 0,1-0,2 % aqueous solution of citric acid.
EFFECT: product of improves commercial value.
