FIELD: technological processes.
SUBSTANCE: method comprises use of the fine-flaked ice from electrically activated water with pH of 5.2–5.5 as the cooling medium. For the production of ice, anolyte is used, to which adding the arabinogalactan powder at a rate of 1–3 g per 100 ml and stirring.
EFFECT: invention enables increase in the chilled fish shelf life while maintaining its quality.
