FIELD: food industry.
SUBSTANCE: the suggested canned food should be manufactured due to chopping and freezing new white cabbage, cutting and frying onions in melted butter, steam blanching and cutting edible boletuses, cutting and infrared drying carrots up to true percentage of roasting losses. Pork should be cut, wheat flour should be fried in melted butter. It is necessary to mix the above-mentioned components at oxygen-free technique with tomato paste, acetic acid, common salt, CO2-extracts of pyrolysis wood, hot black pepper and laurel leaf. The obtained mixture and bone broth should be packed followed by sealing and sterilization. The innovation enables to manufacture canned food being of increased digestibility.
EFFECT: higher efficiency of manufacturing.
