FIELD: food-processing industry, in particular, production of juice from sugar beet.
SUBSTANCE: method involves grinding sugar beet by crushing into pulp and separating juice from pulp using centrifuge; subjecting pulp after separation of juice to additional crushing and four-staged washing in conical filtering centrifuges, with fourth washing stage being performed with the use of water; using filtrate from each centrifuge for washing of pulp by recirculation from each subsequent washing stage onto previous stage; mixing filtrate from first washing stage with pulp before juice is released therefrom, and mixing filtrate of second washing stage with pulp before and after said additional crushing process.
EFFECT: increased yield of beet juice.
