FIELD: oil and fat industry.

SUBSTANCE: method involves extraction of carotinoid-containing vegetable material with the Brix's index above 10°, vegetable material is mixed with water up to attaining the Brix's parameter 10°, not above, crushed and solid substances are separated from liquid to obtain two phases, pulp and whey. Extraction of pulp to obtain carotinoid-containing vegetable extractive oleoresin is carried out at temperature 40-65°C and in the ratio pulp to a solvent from 1:3 to 1:6. as a solvent method involves using solvents or their mixtures with a value δH between 0 and 5, and value δp - between 0 and 10. Invention provides the enhanced effectiveness and economy in isolating carotinoids and vegetable oleoresin from vegetable material with the Brix's parameter above 10°.
