FIELD: alcoholic beverage industry.
SUBSTANCE: water-alcohol solution (sorting) having required concentration is prepared from rectified ethyl alcohol and corrected drinking water. Sorting solution is thoroughly mixed and, after correction of its concentration, pumped to pressure tub and therefrom routed to coal-cleaning battery. Filtered on coal-cleaning battery, vodka is passed to adjustment tank, to which, at stirring, a composition is added containing carbohydrates, namely mono- and disaccharides, in amount from 0.002 to 10 g per 1 L vodka (on dry basis). Ingredients in amounts provided for particular vodka formulations can also be added. Thereafter, before bottling, vodka is subjected to final filtration, which represents cascade microfiltration through filters with pore sized 5 μm and 0.35-1.0 μm. More particularly, carbohydrate composition is provided in the form of a syrup or as crystals and contains following ingredients, wt %: lactose 0.2-4.88, galactose 0.43-6.75, fructose 0.2-74.1, epIlactose 0.2-3.8, tagatose 0.06-2.85, mannose 0.05-2.3, other carbohydrates including saccharic acid 0.04-2.6, additive 0.0-22.4, and lactulose - the balance. Above-mentioned additive can be represented by ascorbic acid plus organic selenium or succinic acid plus colloidal silver, or honeycomb plus colloidal silver, or glycine. Method of invention allows tasting rate of the product to be raised from 9.44 to 9.55-9.68.
EFFECT: improved organoleptic properties of product, which are stabilized on storage during at least 12 months.
