FIELD: process for producing of gasified caramel.
SUBSTANCE: method involves preparing hot caramel mass in liquid or pasty state; mixing hot caramel mass with gas and forming into caramel products formed as caramel centers; cooling formed caramel centers and/or caramel centers to be formed under excessive pressure. Residual pressure in bubbles of cooled caramel centers does not cause destruction thereof after relieving of pressure to atmospheric pressure.
EFFECT: wider range of gasified caramel products, such as candy glasses.
