FIELD: food industry.
SUBSTANCE: invention relates to a caramel product of a novel caramel material. One proposes a caramel product in the form of hard candy, grapeseed, candy, soft candy or chewing caramel of at least two components (a) and (b), which together form solid integral caramel material, where (a) is an alcohol-free component comprising at least one sugar, a sugar substitute, a sugar-like substance, or mixtures thereof, and (b) is a non-porous component containing a mixture of ethanol or alcohol liquid and a bearing matrix selected from a group consisting of hard sugar or sugar powder, a sugar substitute, a sugar-like substance, a solid or powdered thickener from a group of celluloses, and a hydrocolloid gel, wherein the sugar-like substances are selected from a group consisting of dextrins, maltodextrins, polydextrins and polydextrose, and wherein the solid or powdered thickener from the group of celluloses is selected from microcrystalline cellulose, methyl-, ethyl-, hydroxypropyl-, hydroxypropylmethyl-, methylethyl-, carboxymethyl-, sodium carboxymethyl cellulose and cellulose esters, and where ethanol or alcoholic liquids are present in component (b), being uniformly distributed in the bearing matrix and bonded therewith, where component (b) is present in the candy product, being in-built into component (a) such that components (a) and (b) form together solid integral caramel material, where ethanol or alcohol liquids are substantially uniformly distributed in solid integral caramel material. Also disclosed is a method of producing said caramel product, comprising the following steps of the method: (1) preparation of viscous, moldable, viscoplastic, paste-like or fluid mass of alcohol-free component (a) by heating mixture or melt of required ingredients of component (a); (2) preparation of component (b) by providing support matrix material as defined in 1, optionally adding other additives, stirring ethanol or alcohol liquid in the matrix material until a substantially uniform viscous, moldable, viscoelastic, fluid or paste-like mixture is obtained; (3) pouring or adding component (b) from step (2) to a viscous, moldable, viscoelastic, paste-like or fluid mass of the alcohol-free component (a) from step (1) to obtain caramel material, in which components (a) and (b) can have an interface with each other, and where alcohol is substantially uniformly distributed in solid integral caramel material; (4) molding caramel material obtained at step (3), to produce molded article and (8) molded article cooling to produce caramel product.
EFFECT: invention provides a long taste sensation, allowing to enjoy an alcoholic aroma during the whole period of the product consumption.
