FIELD: canned food industry.
SUBSTANCE: composition for treatment of food products contains metabolites propionic acid bacteria combined with lantibiotic, cell-destroying enzyme and organic acid or salt thereof. Method involves using said composition and preparing food products treated using given antimicrobial composition. Antimicrobial composition is effective from gram-positive and gram-negative vegetative bacteria and from hazardous gram-positive spore-forming bacteria.
EFFECT: increased efficiency in treatment of food products using said composition.
