FIELD: fat-and-oil industry.
SUBSTANCE: fat contains at least 25 wt% of HUU triglycerides and at least 18 wt% of HOH and HLH triglycerides, 8-30 wt% of HOO triglycerides. HOH/HLH ratio is from 30/70 to 85/15, and O is oleic acid residue, L is linolic acid residue, U is oleic or linolic acid residue, and H is residue of saturated fatty acid with number of carbon atoms exceeding 15. Stearic acid constitutes more than 50 wt% of saturated fatty acids in group of triglycerides comprising HOH, HLH and HUU triglycerides. Two non-processed fats are mixed, said fats having increased content of stearic acid as compared with native oil of sunflower and containing at least 12 wt% of stearic acid. Food composition and spread contain above fat.
EFFECT: provision for obtaining of product having increased melting capability and hardness independent of temperature.
