FIELD: food industry.
SUBSTANCE: fat mixture composition comprises 20% or less of saturated fatty acids, of which 38% or less of palmitic acid (C16:0) and 20% or more of stearic acid (C18:0). Said fat mixture is prepared from a solid fat base constituting from 5 to 100%, comprising from 5 to 100% of one or more solid fat and at least 5% of stearic acid. The fat spread composition comprises from 10 to 90% of the above fat mixture.
EFFECT: invention allows to obtain fat spreads containing the minimum possible amount of saturated fatty acids, said fatty acids should contain the minimum possible amount of saturated fatty acids having not more than 16 carbon atoms and the maximum possible amount of stearic acid, that can reduce cholesterol in consumers, while possessing an acceptable structure, texture and taste.
