FIELD: automation of processes, in particular, automation of fish product hot smoking processes.

SUBSTANCE: method involves heating air fed for slightly drying in condenser of heat pump installation and in waste heat exchanger; cooling air in double-sectioned evaporator of heat pump installation whose operating and reserve sections are alternatively operating, respectively, in condensation and regeneration mode for closed contour cooling of fish; using steam generator for producing of saturated steam, with one part of resultant steam being fed for cooking through, and other part being directed for regeneration of cooling surface of evaporator reserve section; feeding waste steam into waste heat exchanger for heating of air fed for slight drying; discharging produced condensate into condensate collector and then newly feeding said condensate in closed cycle mode into steam generator; combining flows of waste air after slight drying and cooling procedures and feeding combined air flow into operating section of evaporator; dividing cooled air flow delivered from operating section of evaporator into two parts; directing one of said flow parts for slight heating and slight drying of fish and directing other of said flow parts for cooling of fish.

EFFECT: improved quality of ready product and reduced labor intensity.
