SUBSTANCE: invention relates to plant whey material enriched with aglucon isoflavone, whey protein material, material with high content of genisteine, material with high content of daidzeine, aglucon isoflavone-based material and methods for production thereof from plant protein whey. Isoflavone conjugates containing in plant protein whey are converted into isoflavone glucosides by whey treatment at temperature, pH and for time sufficient for conversion. Isoflavone glucosides are converted to aglucon isoflavones by enzymatic reaction to produce aglucon isoflavone-enriched plant protein whey. Aglucon isoflavone-containing whey protein material is obtained from aglucon isoflavone-enriched plant protein whey. Material with high content of genisteine, material with high content of daidzeine, aglucon isoflavone-based material are isolated from alcohol extract, containing aglucon isoflavones of whey protein material.
