FIELD: food industry, canned products industry.
SUBSTANCE: the present innovation deals with the technology for manufacturing canned first-course dishes for cosmic nutrition. The suggested canned food should be manufactured due to boiling, separating against the broth and reducing dried mushrooms; cutting, breading in wheat flour, roasting in melted butter and reducing the fillet of bluefish; cutting, frying in melted butter and reducing carrots, parsley root, celery root and onions; chopping, freezing and reducing new white cabbage; frying wheat flour in melted butter. Reducing procedures should be fulfilled upon a chopper. The above-mentioned components should be mixed with sour cream, mushroom broth, fish broth, tomato paste, common salt, citric acid and CO2-extracts of the preset micromycete type biomass, hot black pepper and laurel leaf. The mixture obtained should be packed into aluminum tubes followed by sealing and sterilization. The innovation enables to obtain canned food being of increased digestibility.
EFFECT: higher efficiency of manufacturing.
