FIELD: food processing industry, in particular food transparent or semitransparent water-in-oil microemulsion.
SUBSTANCE: claimed water-in-oil microemulsion contains (mass %): oil 40-97; surfactant 1-40; second surfactant 0-30 or cosolvent 0-30; and aqueous phase 0.1-25 %. Said oil contains 25-97 mass % diglycerides based on total mass of glycerides. Method for microemulsion production includes preparation of aqueous phase by dissolving of water dissolvable components in water. Then oil phase is prepared by dissolving of oil dissolvable components in oil. Further emulsifying of oil and aqueous phases is carried out.
EFFECT: food transparent or semitransparent water-in-oil microemulsion with relatively high water content and long term stability.
