FIELD: analytical methods in food industry and biotechnology.

SUBSTANCE: method envisages electrophoretic separation of components to be determined with the aid of consecutively forcing test sample into two ends of capillary preliminarily filled with working electrolyte. Sample is further affected by electric field followed by registration of components using conductometric detector to produce electrophoregram, from which individual components are qualitatively and/or quantitatively identified. Water-based working electrolyte contains 25-35 mmole histidine, 1.5-2.5 mmole Crown ether, and 0.02-0.50 mmole Triton X-100. According to invention, test sample is forced into capillary at pressure 20-70 mbar for 10-30 sec and working voltage of electric field is 28-30 kV. Individual components are cations, amines, inorganic and organic acid anions. Method may be, in particular, applied in alcoholic drink and soft drink industries.

EFFECT: increased reliability of determination and universality of analysis conditions due to enabled use of the same conditions when proceeding with both aqueous and water-alcohol media.
