FIELD: fish industry.
SUBSTANCE: method involves preparing raw material; providing acid hydrolysis; neutralizing; evaporating; ripening and packaging ready product; maintaining constant volume of reaction mixture during hydrolysis process by providing constant feeding of water having temperature equal to that of reaction mixture; stopping water feeding process 11-12 hours before termination of hydrolysis process; after termination of ripening process, providing repeated neutralization process until pH value reaches 5.3-5.8; heating resulted mass to temperature of 60-80 C and filtering in nutsch filter under vacuum at pressure of 0.75 atm and simultaneously packaging in sterile containers.
EFFECT: increased yield of ready product.
