FIELD: method of producing protein hydrolysates from raw material of aqueous origin; may be used for mullusks processing aiming at preparation of food and medical-and-prophylactic products. SUBSTANCE: method involves removal of soft tissue from mollusk valves, its hydrolysis by hydrochloric acid and neutralization. Removal of soft tissue from mollusk valves is carried out by their heating at mixing for breaking valves sealing, and addition of ferment. Duration of acidic hydrolysis is selected depending on quality of raw material after its fermentative treatment.
