FIELD: biotechnology; food industry.
SUBSTANCE: disclosed is a method of producing protein hydrolysates from anadara. Method includes dissolving and separating soft tissues from valves using alkali, which does not react with shells of molluscs, and further hydrolysis of soft tissues using citric acid, which makes it possible to transfer into a dissolved state not less than 45–50% of nitrogenous substances of the initial raw material.
EFFECT: method enables to obtain anadara hydrolyzate with improved organoleptic properties and reduced content of table salt, and lowering the pH during neutralization to 5_6 promotes longer storage of the end product without the risk of bacterial contamination.
