FIELD: food industry. SUBSTANCE: desired product is hydrochloric acid hydrolyzate of mussel's meat having dry substance content 28-33 mass %, pH 5.0-5.8, summary content of nitrogen 1.7-2.5 mass %, and content of amine nitrogen 0.85-1.2 mass %. Said product contains melanoids having molecular weight less 5000 and more 5000, ratio of melanoids fractions is within definite ranges. Method for producing desired product involves hydrolysis of mussel's meat with the help of hydrochloric acid, neutralization by 20-25% solution of sodium hydroxide, evaporation, sustaining within at least 5 days and separation of precipitate.
