FIELD: food industry.
SUBSTANCE: the suggested canned food should be manufactured due to cutting and blanching celery root, apples and potatoes; cutting and freezing parsley and celery greens; cutting ham and marinated mushrooms. Then the above-mentioned components should be mixed at oxygen-free technique with acetic acid, vegetable oil, common salt and mustard. The mixture obtained and mayonnaise should be packed, sealed and sterilized. This enables to manufacture new canned food out of the well-known dish, widen the quantity of technical means and dishes and increase the digestibility of the present dish from 6.2·104 up to 6.7·104.
EFFECT: higher efficiency of manufacturing.
