FIELD: food products.
SUBSTANCE: invention belongs to gobstoppers with modified surfactants and/or hydrofuge surface. Gobstopper has at least one surfactant on the surface which represents emulsifier with oil consistence. Emulsifier is monoglyceride of high-molecular fatty acids, diglyceride of high-molecular fatty acids received with the usage of compound ether monoglycerides and/or diglycerides of high-molecular fatty acids and their mixture. This surfactant is applied for surface modification without gobstopper sugar. Food acid is used for stability increasing while storage of sugar-free gobstoppers. Food acid is apple acid, citric acid or lactic acid. Food acid is buffered. For increasing of stability while storage the gobstoppers surface is modified with application of at least one of surfactants by dipping, spraying or panning.
EFFECT: stability increasing while storage of sugar-free gobstoppers.
