SUBSTANCE: proposed sugar-free candy containing isomalt, maltitol, orbital, citric acid, a flavouring agent and a colorant at the following wt % ratio, in terms of dry substance: isomalt - 40.80-77.25, in particular - that with isomalt isomers size equal to 1.1-GPM - 20.40-40.94%, 1.6-GPS - 19.91-35.38%; maltitol - 20.00-50.00; sorbitol - 1.70-5.00; flavouring agent - 0.50-2.00; citric acid - 0.50-2.00; colorant - 0.05-0.20. The candy has a weight equal to 1.7-2.4 g and moisture content amounting to 1.0-2.0%.
EFFECT: invention makes it possible to produce sugar- and molasses-free candy noted for high organoleptic properties, stable during production with usage of standard equipment operating under atmospheric pressure and having a relatively low cost.
