SUBSTANCE: method includes heating the compot in the air flow at 135°C and 2.75 m/sec within 29 min and following treatment with the air flow at 100-105°C within 3 min and cooling in the air flow at 34-35°C and 7 m/sec within 14 min. In heat treatment, the tin is turned upside down at 0.166 sec-1.
EFFECT: water consumption is reduced; quality of finished product is improved due to reduced time of heat treatment.
