FIELD: food industry.
SUBSTANCE: invention relates to flour-and-cereals industry. Method includes grain cleaning from admixtures, steaming at pressure of 0.35-0.6 MPa during 4-6 min, two-step drying and peeling. Drying is carried out with the air at temperature of 90-100°C during 30 minutes, then with the air at temperature of 120-130°C during 60 minutes. Invention allows obtaining food buckwheat grain meeting GOST requirements, from unconditioned buckwheat grain.
EFFECT: obtaining food buckwheat grain meeting GOST requirements, from unconditioned buckwheat grain.
