SUBSTANCE: method involves roasting the peeled buckwheat seeds at 170-200 C for 3-5 min, wetting with water at 90-100 C up to moisture mass part in grains 19-21%, steaming with steam under atmospheric pressure for 4.9-5 min, soaking for 1-2 h under isothermic conditions, drying to moisture content 13.5%, not above, and cooling to temperature not exceeding environment air temperature by 6-8 C.
