FIELD: food industry.

SUBSTANCE: the method includes filling of jars with juice, processing of the filled jars with UHF field at the frequency of 2400±50 MHz within 55 - 60 sec up to 95 - 96°C. Then filled jars are hermetised and pasteurised in the autoclave.

EFFECT: allows to reduce the duration of thermal pasteurisation of preserves.
