SUBSTANCE: food water-retaining emulsifier-stabiliser contains following components in the proportion by weight: 1 part of carrageenan, 1 part of sodium citrate, 2.5 parts of modified starch, 4.5 parts of sucrose ester and fatty acids, 20 parts of carboxymethylcellulose sodium salt.
EFFECT: food additive is universal in terms of cold introduction into a product, ensures additional water retention and texture compaction.
