FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of meat products enriched with vitamins. Boiled sausage product contains 1 grade trimmed beef, semifat trimmed pork, dry skim milk, water-in-oil emulsion based on red palm oil in the amount of 4.2 wt %, spices in the form of spice water extracts, sodium nitrite, sodium ascorbate, egg melange, table salt, water, colouring agent Karmin, carrageenan and calcium citrate with a certain ratio of components. Water-in-oil emulsion contains red palm oil "Carotino", drinking water, monoglycerides of fatty acids, xanthane gum and soya bean lecithin.
EFFECT: invention ensures production of high quality frankfurters and small sausages produced both out of cooled and defrosted meat and enriched with vitamins.
