FIELD: food production technology.
SUBSTANCE: recipe components are prepared according to traditional technology. Prepared potatoes, celery root, apples and white mushrooms are cut and blanched. Prepared carrot is cut and blanched. Prepared cooked sausage and pickled cucumbers are cut and blanched. Prepared green peas are frozen, better slow freezing. Mixing the above-mentioned ingredients with culinary salt and calcium ascorbate under oxygen-insulated conditions, The obtained mix and mayonnaise is packed, hermetically sealed and sterilised producing the desired product.
EFFECT: increase of culinary dish assimilability.
