FIELD: food products.
SUBSTANCE: method of production cereal flakes includes preparation the mixture of the recipe components, processing the mixture in cooking room extruder, transporting the extruded articles to cutting device, cutting it, forming cereal flakes and frying in low humidity up to 1...4%. Novelty is the following: the mixture of the recipe components are conditioned by vapour in the horizontal continuously-operating blending machine for obtaining humidity of 18...25% during 30...600 seconds before feeding it to the cooking room extruder. Mixture processing is performed in the cooking room turn-screw extruder. Extruded articles are transported to the cutting device by at least one-screw extruder. Extruded articles are cut into separate particles of free form by fly knife. Cereal flakes are formed by at least a pair of smooth rolls.
EFFECT: better consumer qualities, possibility of usage as initial components of the mixture, wide variety of cereal crude materials, widening of the variety of products.
