FIELD: food industry.
SUBSTANCE: invention relates to the technology of manufacturing canned concentrates of first-course dishes. Method involves preparation of recipe components, cutting, blanching and mincing onion, blanching and grating garlic, cutting and chopping mutton. The listed ingredients are mixed with salt and black pepper to obtain a stuffing mass it is formed to obtain meatballs. Leek is cut and browned in the vegetable oil, eshalot is cut and browned in the melted butter, potatoes are cut and blanched, spinach and peppermint are cut and frozen, peas are boiled till double mass increase. Leek, eshalot, potatoes, spinach, peppermint, peas, wheat flour, yogurt, lemon juice, table salt, curcuma, cinnamon and black bitter pepper. Meatballs, the obtained mixture and drinking water are packed, sealed and sterilised.
EFFECT: method allows manufacturing of new canned food with higher digestibility comparing to similar culinary dish.
